Keto Recipe - Pound Cake

The texture of this pound cake is very dense and rich. I don’t doubt that you’d be able to easily fool someone who is not following a keto diet plan. It tastes just like a flour based pound cake. It’s sweet enough without being overly sweet. If you want to add some more sweetness to the loaf, I’d suggest a very small amount of stevia instead of adding more erythritol.

Pound cake
2 ½ cups almond flour
½ cup unsalted butter, softened
1 ½ cups erythritol
8 whole eggs, room temperature
1 ½ teaspoons vanilla extract
½ teaspoon lemon extract
½ teaspoon salt
8 ounces cream cheese
1 ½ teaspoons baking powder

¼ cup powdered erythritol
3 tablespoons heavy whipping cream
½ teaspoon vanilla extract

My 12yr old made this today we kinda tweaked the recipe. We added just a 1/2cup of the erythritol since we dont like the minty aftertaste and i find it to be very sweet more than sugar. And for the glaze we did one tablespoon of it. Came out perfect no minty aftertaste cant wait to try it with my bulletproof coffee tomorrow morning

I made it but then my cream cheese had sugar too ughh.... It's either because of that or something else I messed up but the cake tastes super sweet. Like really. I also used carbquick flour instead of almond. Other than that it's pretty good. I'd make it again in the future ....hopefully less sweet one

Erythritol is more than 200× sweeter than sugar. 1&1/2 cup of erythritol? 🤔 and cooking time between 1h or 2h ? That's way too big gap.

This turned out delish! I will next time however, omit 2 eggs. It was almost "too eggy" tasting, but thank goodness for the lemon juice. Oh and I added about a tablespoons lemon zest.

It also goes works with lemon juice (fresh squeezed) in place of the heavy cream. It's a lighter glaze that ends up looking translucent like a glazed doughnut.
