This recipe is a gorgeous lookin' treat, and if you're watching your carbs and calories, this one's definitely for you! A rich red+yellow curry sauce poured over noodles with lots of fun toppings, and instead of the typical rice noodles, I'm using tofu shirataki which are a low-carb, low-calorie noodle substitute! Delicious and low calories? I'm in!

About Pai:

Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the YouTube channel Pailin's Kitchen.

Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.

After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via YouTube videos, her cookbook, and cooking classes. We add chicken broth instead of water and add bamboo shoots in oil and add chicken instead of fish. Also a tablespoon of dried ground up peppers, a spoon of PB too if you like the taste. When no coconut you can substitute milk....not as good but it works.

As a person who has lost 96 lbs (going from 230 lbs to 134 lbs, standing at 5'6"), using a low carb diet, one of the things that I miss most is noodles. It is nice to have this low carb substitute. I can finally have noodles again, without feeling guilty. Thank you!

Unfortunately, I didn't have any fish so I used some peanuts for protein, still the curry sauce was delicious. I used stir fry vegetables to accompany the noodles. Thank you for this recipe. :)

I actually bought Shirataki noodles out of curiosity and then found this recipe. The sauce really is delicious, very very rich and full of flavor, though I have to say the noodles themselves made me go a little bit sick, the really have no taste at all, but the consistency is like slimy and springy at the same time...makes me shiver thinking about it. Anyway, after managing to get the Shirataki noodles down there was still a lot of sauce left, so to calm down my stomach I made some Somen noodles and ate a little bit of the sauce with it, which was really nice. Thanks for the recipe!

Thanks so much for the recipe! I never liked thai curry with noodles, but this one I love! Already made it twice. First time with halibut and the second time (today) with minced chicken breast.
