The biscuit is definitely a keeper! Made them yesterday and I was amazed at the tenderness and flavour. When I make another batch next week, I'll do a sweet version. I found that one was enough to go with my home made chicken salad. I was in heaven when I took my first bite. Thanks for sharing.

I think Id rather use a tasty cheese instead of Mozzarella. Mozzarella is pretty tastless and bland. It does make a good glue but thats about all.

I finally found the recipe for this and made them last night, OMG they are soo good. I've made these before with coconut flower, but almond flower is soooo much better.  Coconut flower tastes a bit gritty to me but these just melt in your mouth like actual cheddar biscuits.  Yay, one more weapon in my arsenal of keto :)
